Breakfast:
Here are three suggestions for a healthy and tasty breakfast:
1. Oatmeal with fruit and nuts Ingredients:
- 1/2 cup oatmeal
- 1 cup of milk or plant-based vegetable drink
- 1/2 banana or other favorite fruit
- handful of nuts (e.g. almonds, walnuts)
Preparation:
- Mix oatmeal and milk in a pot and heat over medium heat until oatmeal thickens.
- Peel and slice the banana.
- Transfer the oatmeal to a bowl, place the banana slices on top and sprinkle with nuts.
2. Sautéed eggs with vegetables Ingredients:
- 2 eggs
- 1 tomato
- 1/2 onion
- 1/2 bell pepper
- salt and pepper to taste
- spoonful of olive oil
Preparation:
- Dice the onion and bell bell pepper, slice the tomato.
- Heat olive oil in a frying pan and add the sliced vegetables. Fry over medium heat for a few minutes until softened.
- Crack the eggs into the vegetables and fry over low heat for a few minutes until the whites are set, but the yolk remains liquid.
- Season with salt and pepper to taste.
3. Wheat bread with avocado paste and egg Ingredients:
- 2 slices of wheat bread
- 1 avocado
- 1 egg
- lemon juice
- Salt and pepper to taste
Preparation:
- Peel and cut the avocado in half, remove the seed. Remove the flesh with a spoon and put it into a bowl.
- Add lemon juice, salt and pepper, and mash thoroughly with a fork.
- Hard-boil the egg, peel it from the shell and cut it into slices.
- Toast the bread in a toaster or frying pan, then spread with avocado paste and arrange the egg slices on it.
